Join us in our annual celebration of Boudin Blanc! This holiday delicacy is a sausage from Northern France that I have slowly perfected while cooking at Chez Panisse and Bouchon in California. It is a much lighter sausage consisting of chicken, pork, cream, pain de mie, and lightly scented with allspice, nutmeg, bay and thyme. It’s quite rare and a true delight!
We have put together a traditional boudin blanc meal kit complete with a bottle of wine from Imperfetta. You kit will include, classic pomme purée, red-wine braised prunes, a reduced Demi glacé and a frisee salad with marinated gigante beans, bergamont, and olio nuovo.
